The rest is a lot of money and time savings. I love nothing more than being able to cook one night and have two meals. Some of my favorites are roast chicken that can be soup, chicken and dumplings, pot pie… or leftover rice made into fried rice for a delicious meal. With a little imagination, yesterday’s dinner can be a beautiful masterpiece. Here are some clever ways I’ve found to make my leftovers last longer without repeating the same meals over and over again.
